Behind the Culinary Experience

At Plantation, the food and beverage experience is shaped by a close collaboration between Chef Nicolas Malherbe and F&B Manager Chap Sokha, combining culinary creativity with operational expertise to deliver a consistent and welcoming dining experience across the resort.

Chef Nicolas Malherbe leads the culinary direction with a focus on refined, flavour-driven cuisine rooted in classical technique. Born in the south of France and influenced by Mediterranean cuisine, he trained in France before gaining experience in Michelin-starred kitchens in Europe and the United States. Drawing on his extensive international background in renowned restaurants and luxury hospitality establishments, he combines precision and creativity with an emphasis on simplicity, seasonality, and quality ingredients. While his foundation is in French culinary tradition, he adapts his style to the setting in Phnom Penh by incorporating local herbs, produce, and Cambodian ingredients wherever possible—some of which he even grows himself. He was also invited to cater at the Royal Residence for the late King Father, His Majesty King Norodom Sihanouk—an honour that reflects the recognition of his culinary expertise.

Chef Nicolas Malherbe and Chap Sokha

Working alongside him, Chap Sokha, F&B Manager, oversees the daily operations of the restaurant and bar outlets, ensuring smooth service and a consistent guest experience. With experience gained at some of Cambodia’s leading hotels, he plays a key role in training the service team, coordinating between kitchen and service, and maintaining high standards throughout the guest journey. His focus is on creating a service style that is attentive, efficient, and warm, while remaining natural and unpretentious.

Together, Chef Nicolas and Sokha ensure that the dining experience at Plantation reflects the identity of the resort: quality without formality, attention to detail without complexity, and a strong sense of place in the heart of Phnom Penh. Their collaboration extends beyond day-to-day operations to include events, private dining, and special occasions, where they work closely to tailor experiences to each guest.
